Yu Kurosaki Selections
What kind of manufacturer is Yu Kurosaki?
Yu Kurosaki is a blacksmith specializing in Echizen-style forged cutlery based in Echizen City, Fukui Prefecture, and the founder of Kurosaki Forged Cutlery. Born in Sabae City, Fukui Prefecture, in 1979, he began his apprenticeship at Kanehiro Forged Cutlery in 2002.
After 12 years of apprenticeship, he became independent in 2014 and established Kurosaki Uchihamono. In 2019, he was certified as a Master of Traditional Crafts.
Echizen Uchihamono is a traditional Japanese craft with over 700 years of history in Echizen City, Fukui Prefecture. While carrying on this tradition, Yu Kurosaki has pushed the boundaries of conventional Uchihamono with original designs that incorporate modern sensibilities.
Through knife shows and sharpening demonstrations in countries around the world—including Sweden, Germany, France, Canada, and the United States—he has become widely known overseas as “Kurosaki Knives” and has garnered strong support from chefs and collectors alike.
Why is Yu Kurosaki chosen?
① Eye-catching beauty— Unique hammered texture
The most iconic feature of Yu Kurosaki’s knives is the hand-hammered “tsuchime” pattern. Each pattern, hammered by hand by a blacksmith onto every single blade, is completely unique, giving each knife a one-of-a-kind character.
This tsuchime pattern is not only visually stunning but also serves a practical purpose by preventing food from sticking to the blade, making the perfect balance of design and functionality a major appeal.
② Long-Lasting Sharpness── Requires Less Frequent Sharpening
Yu Kurosaki’s knives are crafted from high-grade steels such as Powdered High-Speed Steel R2/SG2, and are renowned for their long-lasting sharpness.
Since they require less frequent sharpening, you can maintain a sharp edge without stress, even with daily use.
Minimizing the frustration of a dull blade is a crucial factor for using these knives as everyday cooking tools over the long term.
③ A Commitment to the User — Uncompromising Craftsmanship for Every Single Knife
At the core of Yu Kurosaki’s craftsmanship lies the philosophy that “while it may be just one of thousands for the maker, for the user, that single knife is everything.” That is why he never cuts corners, dedicating his full effort to every single knife.
This approach results in a superior feel and comfort when held, as well as a deep sense of attachment that makes you want to use them for years to come. It is not simply a “sharp knife,” but a tool that lifts your spirits every time you use it—this is why Yū Kurosaki knives are so highly sought after.
④ Trust Recognized by Professionals Worldwide — Loved by Chefs at Home and Abroad
Yu Kurosaki knives are highly regarded not only in Japan but also by top chefs and collectors around the world.
He has exhibited at numerous international knife shows, performing demonstrations of forging and sharpening in countries such as Sweden, Germany, France, Canada, the United States, and Hong Kong, where his techniques and creations have been highly praised.
He has been featured in television programs, magazines, and international media, and is introduced as “a young blacksmith who ranks among the top in both popularity and skill even among the highly skilled knife smiths of Echizen.”
