[General Features]

Glestain All-Stainless knives are made in Japan by Honma Kagaku, immediately recognizable by their unique design.
Dimples in the blade's surface reduce surface tension between the blade and the food being cut, allowing faster, easier, and more efficient cutting.
The blade is constructed of Glestain's original Acuto steel(440A), which undergoes a sub-zero manufacturing process that ensures a very hard (HRC 58-59) and durable edge.
Each Glestain knife comes with a balanced, water resistant Stainless handle.
Glestain knives are in a class of their own; you will not be disappointed with its superior performance.

    Glestain Honesuki knife

    I have about 80 excellent kitchen knives, I collect them, use them daily. Most of them are Japanese knives, Shun (five different series including blue steel) Global, Miyabi, Tojiro, Yaxell, Kasumi, Hattori, Type 301 Porsche, Wüsthof, Zwilling J.A. Henckels, etc.) so I am comparing Glestain to these knives. I specifically bought the knife for comparison, since it is NOT made of VG-10 or better steel.
    I was pleasantly surprised, the knife is very sharp out of the box, it has good valance and the granton edge works a little better than on some other knives. The meat does not stick to the blade as much as to smooth blade knives. I did not use the knife enough to judge the edge retention, but my guess, that it would be on par with the Global knives.
    The Honesuki knives are my favorites, I have five, the Glestain blade is bit narrower than most and the heel does not cut, as on the Shun knives, but the blade is thin, similar to a Shun Fuji SG-2 Hammered Honesuki knife. This enables the user to cut even vegetables not just meat.
    I would recommend the knife to anyone, who knows what a Honesuki knife is for and have at least a little skill to use it for chicken or other bird boning.
