Brieto-M11PRO kitchen knife series are produced by Kataoka that is one of the excellent kitchen knife manufacturers in Japan.
The blade is made of High-end Molybdenum-Vanadium Stainless steel to enhance the hygiene with Rust-resistance. The steel is treated by three stages of quenching from 1050degC, sub-zero treating to -73degC and tempering until the steel reaches a special hardness.
The handle is so easy to grip and it's weight is very well balanced. It is constructed of 18-8 (SUS304) Stainless Steel, an odorless, enormously durable material made of resin and linen that will last decades. The end of the handle is stainless steel with a cavity structure, which gives the knife both outstanding stability and lighter weight. In addition to that, the blade and handle clearance without structure is very hygienic.
